for 6 people:
1 FREDDI O'Mamma Stracciatella
350 g fresh ricotta
4 candied cherries
2 tablespoons vanilla powdered sugar
50 g chocolate chips
4 long and dry cookies for milk
for covering and decoration:
sugar paste green leaves
3-4 egg whites
75 g powdered sugar
chocolate chips
Prepare the cream, mixing the ricotta with the powdered sugar until smooth and creamy. Add the chocolate chips (50 g) and 4 candied cherries cut into small pieces and mix.
Cut the cake Freddi O'Mamma Stracciatella into slices about 1 cm thick and put on a container for cassata, lined with plastic wrap. Pour the cream inside, leveling and cover with cookies (if you do not have them, use those that you have at home, just cover the bottom).
Keep in the fridge for about 3 hours, then cover with royal icing, prepared with the egg white beaten with the powdered sugar.
Decorate with candied cherries, chocolate chips and keep in the fridge for a couple of hours, until the icing dries.
Finally decorate with the sugar paste green leaves.
Cut into slices and serve.
