For the mascarpone eggless cream
For the filling
Put the frozen berries in a bowl and mix them with 2 tablespoons of icing sugar. Let it thaw in the fridge.
Preparation of eggless mascarpone cream
Whip the fresh liquid cream (cold from the fridge) with 40 g of icing sugar and put in the fridge.
Separately work the mascarpone with the remaining 50 g of icing sugar until obtain a creamy mixture.
Add the whipped cream, stirring from the bottom to the top in order to not disassemble the mixture; then put it in the fridge.
Composition of the glasses
Form a base with berries on each glass, then transfer the mascarpone cream into a piping bag and form a generous layer of cream on the fruit.
Cut a Freddi snack in half and place it on the cream layer. Add berries and then a layer of mascarpone cream, another half of Freddi snack (also different flavour) and cover with the cream. Decorate with berries.
Keep in the fridge until ready to serve.
